The Holiday Bikini – A Recipe

WThis is a simplified interpretation of a drink found on a new cocktail list. It's a large-volume pre-mixed that is bursting with flavours of a Christmas time, rendering it perfect for your holiday party. Save the extra cordial you can use for brunch beverages, puddings, or to make more rounds of the drink.

The Bikini Cocktail

Makes enough for 10 people

For the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Premix (yields 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Method

Making the Citrus Syrup: Combine every components in a pan, bring to a gentle boil, mixing until the sugar dissolves. Then, take off the heat allowing it to cool down completely. Transfer into a sealable bottle, cap it and store chilled, where it will keep for about four weeks.

For the Cocktail Base: Combine every spirits and syrup into a big jug, leave to sit for an hour, then pass it through preferably using a fine cloth, so it's completely strained.

For serving: Pour 85ml from the batch mix into a stirring glass filled with ice, and stir carefully for about 60 seconds to chill. Pour to a chilled martini glass or equivalent, top with the cranberries and finish using a brief mist of the essential oil over the top.
